This Wild Specialty Beer delivers a decadent sensory experience inspired by pineapple upside-down cake. A thick, PULP texture defines the pour, bursting with the aroma of caramelized pineapple and a subtle, funky acidity. The palate leads with vibrant, tropical pineapple acidity, followed by sweet layers of vanilla and sponge cake. While the fruit intensity is high, a foundational wild fermentation adds a complex, tart brightness that prevents the sweetness from becoming cloying. It finishes with a lingering fruit character and a soft, pastry-like roundness, successfully marrying dessert-like richness with the sharp, refreshing edge of an American Wild Ale.
Appearance. Opaque and dense with a vibrant golden-yellow hue, resembling fruit purée. Upon agitation, it forms a thick, creamy, off-white head with moderate retention and significant leg-like lacing due to the high fruit solids.
Aroma. High intensity of fresh, ripe pineapple dominated by a sweet, caramelized undertone. Secondary notes of vanilla bean and toasted sponge cake are evident, intertwined with a moderate lactic tartness and a very subtle earthy funk from the wild fermentation.
Taste. The initial impression is a sharp, refreshing burst of acidic pineapple. The mid-palate reveals complex cake flavors including biscuit-like malt, vanilla, and a hint of cherry-like sweetness. Bitterness is nearly absent, allowing the clean lactic acidity to provide balance. The finish is long and fruit-forward, leaving a pleasant, lingering pineapple sweetness.
Mouthfeel. Medium-full body with a thick, pulpy, and almost velvety texture. Carbonation is moderate, providing a slight lift to the heavy fruit weight. No alcohol warmth is present; it remains smooth and creamy throughout without significant astringency.
