This Winter Solstice Sweet Stout captures the comforting essence of a rich hot chocolate through the use of Encuentro cacao. Pouring a viscous, deep obsidian, it leads with an inviting aroma of milk chocolate and lightly toasted malt, backed by a subtle cream-like sweetness. The palate is defined by luxurious cacao and rounded roasted notes that evoke sweetened espresso. A medium-full, velvety body provides a lush canvas for the residual sugars, while the 7% ABV offers a gentle warmth suited for the season. The finish is smooth and lingering, balancing gentle roast bitterness with a persistent, decadent chocolate character.
Appearance. Opaque, deep ebony to black (35-40 SRM). Pours with a dense, creamy tan head that shows good retention and leaves delicate lacing on the glass.
Aroma. Moderate to high intensity of cocoa and milk chocolate, driven by the Encuentro cacao. Subtle notes of roasted coffee and toasted bread follow. A distinct cream-like sweetness is present, alongside low dark fruit esters such as plum. Hop aroma is absent.
Taste. Initial impression is of rich, sweetened chocolate and cocoa powder. Mid-palate introduces moderate roasted grain flavors reminiscent of coffee with cream. Bitterness is moderate but perceived as low due to the high residual sweetness. The finish is long and sweet, with a clean, lingering chocolate aftertaste and no harsh burnt character.
Mouthfeel. Medium-full to full-bodied with a smooth, creamy texture. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present, reflecting its 7% strength, without being distracting or fusel.
