Summer Solstice reimagines the American IPA through a wild lens, utilizing a 100% Brettanomyces fermentation to introduce a subtle rustic complexity. The aromatic profile is dominated by the bold interaction of Simcoe and Columbus hops, casting a wide net of resinous pine and vibrant citrus zest. On the palate, the sauvage character provides a bone-dry finish that accentuates a firm, clean bitterness. Expect layers of grapefruit and earthy spice to emerge, supported by a lean, grainy malt backbone. This refreshing yet complex ale balances funky fermentation nuances with the classic high-impact hop intensity of a traditional West Coast-inspired American IPA.
Appearance. Medium gold with a slight haze; features a medium-sized, white head with good persistence and light lacing.
Aroma. High intensity hop aroma with prominent notes of resinous pine, earthy spice, and sharp grapefruit from the Simcoe and Columbus hops. A subtle leathery and pineapple-like funk from the Brettanomyces fermentation is present, supported by a low, grainy malt sweetness.
Taste. Initial impression is hop-forward with intense citrus and herbal resin flavors. A medium-high to high bitterness is present, balancing a very low, clean malt profile. The fermentation character is complex, contributing dry, rustic notes and light stone fruit esters. The finish is bone-dry and crisp with a lingering, bitter, and hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth texture and medium-high carbonation. Alcohol warmth is very light and well-integrated; no harshness or astringency is present.
