Double Sunset is a vibrant Double IPA that captures a fleeting sensory moment through an intensive double-hopping process. Utilizing fresh Mosaic and Sabro, this ale delivers a bold aromatic profile defined by lush tropical fruit and distinct creamy coconut. Bright citrus notes dance across the palate, supported by a clean, unobtrusive malt backbone that allows the hops to remain the focal point. While it possesses a significant roundness and a firm, present bitterness typical of the style, the finish remains remarkably smooth. This expression of craftsmanship balances its strength with a refreshing, hop-forward complexity that evolves with every sip.
Appearance. Deep gold to light orange-copper (8-10 SRM) with a slight, modern haze. Features a moderate, persistent off-white head with fine lacing.
Aroma. High intensity hop-forward bouquet. Dominant notes of coconut and tropical stone fruit from Sabro are complemented by the complex blueberry, tangerine, and light resinous pine of fresh Mosaic. Very low, clean, grainy malt in the background with a neutral fermentation profile and a hint of clean alcohol.
Taste. Initial punch of tropical mango, papaya, and citrus zest. The mid-palate reveals a distinct creamy coconut character and subtle berry undertones. Bitterness is firm and assertive but lacks harshness. The malt is supportive and neutral, leading into a medium-dry, lingering hoppy finish with a soft, well-integrated alcohol presence.
Mouthfeel. Medium-full body with a smooth, slightly rounded texture. Moderate-high carbonation provides a crisp edge. Noticeable but restrained alcohol warmth without any hop-derived astringency.
