This American Stout presents a complex sensory journey, merging aggressive roasting with the vibrant additions of a Mexican-inspired profile. An opaque, jet-black pour yields intense aromas of dark chocolate and roasted coffee beans, accented by the aromatic warmth of Canelle and a subtle, earthy piment spice. On the palate, deep layers of Chocolate malt provide a bittersweet foundation for resinous American hops and firm bitterness. The finish is punctuated by a lingering cinnamon heat and a gentle capsicum tingle, balanced by a medium-full, creamy body. At 8% ABV, a smooth alcohol warmth enhances the festive, spiced character.
Appearance. Jet black (35–40 SRM); large, persistent light brown head with dense lacing; completely opaque.
Aroma. High intensity roast with dominant notes of dark chocolate and espresso; distinct woody cinnamon and a hint of dried chili pepper; low resinous hop character; light ethanol sweetness and subtle fermentation esters.
Taste. Bold initial impression of bittersweet chocolate and charred grain; mid-palate reveals spicy cinnamon and a mild peppery snap; medium-high bitterness from both roasted malts and hops; dry, lingering finish with a touch of roasted astringency and spice.
Mouthfeel. Medium-full body with a creamy, coating texture; moderate carbonation; noticeable but smooth alcohol warmth; very light peppery astringency.
