This complex specialty cider showcases an intriguing marriage of rustic apple orchards and rich brewery character. It opens with aromas of dark roasted coffee-stout and a subtle brush of peated whisky, layered over a base of crisp, tannic heritage apples. On the palate, a soft, rounded mouthfeel from oak aging delivers notes of charred wood, light vanilla, and a hint of dark baker's chocolate, balancing the cider's natural bright acidity. The finish is remarkably dry and warming, leaving a lingering trace of smoked oak and espresso that begs another sip.

Appearance. Deep amber to light copper-brown with brilliant clarity. Pouring produces a brief, thin light-tan collar that dissipates rapidly, leaving a clean surface with minimal lacing.

Aroma. Moderate to high intensity. Freshly pressed heritage apples are beautifully intertwined with distinct notes of dark roasted coffee, cold brew, and a whisper of dark chocolate from the stout barrel. Beneath this lies a subtle, spirit-like warmth of peaty whisky and sweet vanilla-rich American oak, accompanied by a faint touch of woodsmoke.

Taste. An initial burst of crisp, tart orchard apple is quickly enveloped by the rich, complex flavors of stout and spirit. Very low hop bitterness, but the roasted malts and oak provide a structured, drying balance to the apple's natural fruitiness. The finish is dry and clean with lingering notes of smoked wood and dark chocolate.

Mouthfeel. Medium body with a smooth, velvety roundness derived from the barrel aging. Carbonation is moderate to low, providing a gentle sparkle. A light, pleasant alcohol warmth is present, without any harshness or hot fusels, accompanied by a mild, pleasant tannic astringency.
