This complex Specialty Cider/Perry presents a sophisticated interplay between rustic wild fermentation and deep spirit-barrel influence. Spontaneously fermented apples provide a foundation of sharp acidity and earthy funk, while the dual barrel treatment creates a multifaceted profile. The ex-Caol Ila barrels introduce a distinct layer of briny peat smoke, contrasted by the warm vanilla, caramel, and toasted oak notes from the ex-Buffalo Trace casks. Subtle remnants of the Imperial Stouts Zoltan and Treacle Treat impart whispers of dark chocolate and roasted grain. The result is a bold, bone-dry cider where the bright orchard fruit is harmoniously balanced by intense wood-derived complexity and a lingering, smoky finish.
Appearance. Deep gold to amber (SRM 7–12) with a slight natural haze from the spontaneous fermentation. It features very low head retention, typical of a still or lightly carbonated cider, with minimal lacing.
Aroma. High intensity and extremely complex. Aromas of tart green apple and lemon zest are layered with peaty smoke, medicinal brine, and charred oak. Subtle notes of vanilla and coconut from the bourbon barrels mingle with a faint chocolate and coffee roast from the stout remnants, all underscored by a leathery, barnyard funk.
Taste. Initial impression is bone-dry and acidic, showcasing tart cider apples. The mid-palate introduces a wave of smoky peat and woody tannins, followed by light vanilla and a trace of cocoa. Fermentation character is assertive with earthy and funky notes. The finish is long and dry, with a lingering combination of smoky spirits and apple skin bitterness.
Mouthfeel. Medium-light body with low carbonation (petillant). There is a noticeable alcohol warmth and a moderate level of tannic astringency from the oak barrels, providing a structured and slightly drying mouthfeel.
