The spontaneous wild fermentation introduces a faint, rustic complexity beneath a prominent bouquet of ripe, orchard-fresh apples bolstered by fresh juice backsweetening. On the palate, the structured bitterness and gentle astringency of traditional English bittersweet fruit are brightened by the zesty acidity of Dutch cultivars. This sparkling English Cider balances its residual sweetness with a crisp, lively effervescence, leading to a clean yet lingering finish that highlights pure fruit character and subtle earthy undertones from its heritage-driven fermentation process.

Appearance. Pale gold to deep yellow; brilliantly clear with an effervescent rise of fine bubbles. Head is minimal and quickly dissipates, typical of the style.
