The influence of wood aging adds a sophisticated structural depth, providing whispers of oak and soft tannins to the blend. It captures the wild essence of the Elegast orchards while maintaining a refined, mixed-fermentation character.
Appearance. Pours a hazy, pale gold to light amber with a brief, fine-beaded white head that dissipates quickly to a thin collar, leaving minimal lacing; typical of cider hybrids.
Aroma. High intensity with a dominant character of tart green apples and cider-like acidity; secondary notes of barnyard funk, wet hay, and earthy leather from the wild yeast. A subtle bready malt sweetness sits in the background alongside faint woody oak and vanilla.
Taste. Initial sharp malic acidity and crisp apple fruitiness lead into a rustic, grainy malt middle.
