This artisanal Oogst 2022 vintage offers a complex sensory bridge between orchard and cellar. Characterized by heritage apples from unsprayed high-stem orchards, the profile is profoundly shaped by its tenure in Bourbon barrels that previously cradled Imperial Stout. This double-barrel provenance introduces a layered, boozy depth, weaving together the bright acidity of the fruit with rich threads of vanilla, toasted oak, and a haunting echo of roasted malt. The result is a Specialty Cider that is remarkably soft and full-bodied, balancing the rustic charm of traditional fruit with the sophisticated, dark complexity of distilled spirits and stout beer.
Appearance. Deep gold to burnished amber (10–14 SRM). Mostly still to very lightly sparkling with no significant head formation or lacing. Clarity is generally clear, though a slight haze may be present from extended wood maturation.
Aroma. High intensity with a sophisticated marriage of fermented apple and spirit character. Primary notes of ripe orchard fruit are layered with heavy bourbon-driven vanilla, caramel, and toasted oak. A secondary layer of dark chocolate and faint roasted grain emerges, courtesy of the Imperial Stout barrel seasoning.
Taste. The initial impression is a balance of tart apple acidity and rich wood sugars. Malt-inflected flavors of cocoa and char from the stout barrels provide a unique depth rarely found in cider. The bourbon influence contributes sweet vanilla and oak tannins, while the finish is soft, layered, and clean with a lingering boozy warmth and a touch of dark fruit.
Mouthfeel. Medium-full body, possessing a weight and viscosity significantly higher than standard ciders. Carbonation is low to still. A prominent but smooth alcohol warmth is present, complemented by a light, structured astringency from the oak barrels.
