Pay the Piper is an indulgent Double IPA that marries intense hop saturation with a decadent, dessert-like foundation. Vibrant layers of passionfruit and peach from two distinct lots of Galaxy hops collide with the bright grapefruit and lime zest of Citra. The addition of vanilla wafer cookies and milk sugar creates a plush, confectionery-like sweetness, evoking notes of cotton candy and sugar-dusted citrus. Brewed with oats for a heavy, velvety texture, the beer balances its significant 10% strength with a creamy richness. It concludes with a soft, lingering finish of vanilla and ripe tropical fruit, presenting a modern, high-gravity interpretation of the style.
Appearance. Deep gold to pale orange with a dense, persistent white head. Completely opaque and turbid due to the heavy use of oats and milk sugar, leaving thick lacing on the glass.
Aroma. High intensity aromatics of tropical passionfruit and sweet peach from Galaxy hops, layered over Citra-derived citrus peel. Secondary notes of vanilla and bready wafers provide a dessert-like quality, complemented by a unique cotton candy sweetness and a clean, warming alcohol presence.
Taste. Initial impression is a wash of sweet tropical fruit—mango, pineapple, and citrus. Milk sugar and vanilla wafer additions provide a medium-high sweetness that rounds out the hop bitterness. The malt profile is doughy and rich, supported by the creamy texture of oats. It finishes with a lingering note of vanilla and dank, resinous fruit.
Mouthfeel. Full-bodied and viscous with a creamy, velvety texture. Carbonation is moderate. A noticeable but smooth alcohol warmth is present, reflecting the high strength without being harsh or solventy.
