The extended aging introduces nuanced oak tannins and a smooth spirituous warmth that integrates seamlessly with the beer’s sharp, puckering finish. While the base provides a sturdy foundation of cocoa and bready malt, the dominant character is a vibrant, fruity tartness that pierces through the darkness, resulting in a bold, multi-dimensional experience where sweetness and acidity find a delicate, barrel-kissed balance.
Appearance. Deep brown to mahogany (25–35 SRM) with prominent ruby highlights. Pours with a thin, tan-colored head that dissipates quickly due to the high acidity and alcohol content, leaving minimal lacing. Slightly hazy from extended barrel conditioning.
Aroma. High intensity; sharp lactic sourness leads, followed immediately by rich notes of dark chocolate and bright, tart cherries.
