This Baltic Porter, a collaboration with HBH, presents a sophisticated interplay of rich malt and traditional ingredients. The addition of wheat lends a silky, structural elegance to the pour, while the inclusion of chancaca introduces deep, unrefined sugar notes akin to molasses and dark caramel. Expect a prominent sensory bouquet of dark chocolate and roasted nuts, underscored by an ester profile of plums and raisins typical of the style. On the palate, it balances a smooth, Schwarzbier-like roast with a deceptive warmth from its 8% ABV. The finish is lingering and complex, marrying the sweetness of dried fruits with a clean, lager-like fermentation profile.
Appearance.Opaque dark brown with deep reddish-copper highlights (SRM 28). Topped by a thick, persistent, tan-colored head with excellent lacing, aided by the wheat content.
Aroma.High intensity with a rich maltiness featuring caramel, toffee, and dark chocolate. The chancaca provides a distinctive molasses and earthy dark sugar character. Complex esters suggest prunes, raisins, and dried cherries, while a deep toasted nuttiness rounds out the profile. No hop aroma; clean fermentation.
Taste.Initial malt sweetness of caramel and chancaca-derived molasses, quickly transitioning to layers of dark chocolate and toasted nuts. A smooth, roasted malt flavor persists without any burnt or acrid harshness. Subtle dark fruit notes of black currant and raisin emerge mid-palate. Medium-low bitterness (approx. 30 IBU) provides essential balance against the malt. The finish is long and dryish, leaving lingering notes of roast coffee and dried fruit.
Mouthfeel.Full-bodied and exceptionally smooth with a creamy texture from the wheat. Medium-high carbonation prevents it from feeling heavy on the tongue. A noticeable but well-integrated and deceptive alcohol warmth provides a pleasant glow.
