This celebratory West Coast style American IPA delivers a vibrant sensory experience powered by a heavy dry-hop addition of Nectaron, Amarillo, Simcoe, and Idaho 7. The aroma is dominated by an intense bouquet of stone fruits, specifically peach and apricot, layered over tropical notes of papaya. Simcoe provides a grounding resinous pine character that defines the classic West Coast profile. The palate follows suit with a hop-forward punch, supported by a clean, neutral malt backbone that ensures the fruit and resinous notes remain the focus. It concludes with a crisp, dry finish and a well-integrated, firm bitterness.
Appearance. Medium gold with brilliant clarity. Topped by a medium-sized, white, persistent head with moderate lacing.
Aroma. High intensity hop aroma with prominent notes of peach, apricot, and tropical papaya. Secondary notes of resinous pine and light citrus zest are present. Low, clean, grainy maltiness provides a neutral background; fermentation is clean with no significant esters.
Taste. Strong hop flavors of stone fruit and papaya lead, followed by a mid-palate of pine and grapefruit. Low, grainy-sweet malt flavor provides a supporting role. Bitterness is firm and assertive but smooth, leading into a medium-dry, crisp finish with a lingering hoppy and resinous aftertaste.
Mouthfeel. Medium-light body with a smooth, non-astringent texture. Medium-high carbonation. Alcohol presence is well-integrated, offering only a very light, smooth warmth.
