El Bolsón Negra Extra presents a robust interpretation of a Dunkles Weissbier, elevated by a slightly higher alcohol presence that enhances its malty depth. The profile is defined by a sophisticated interplay between the signature German weizen yeast and a specifically programmed mash that emphasizes a rich, sweet body. Prominent aromas of ripe banana and spicy clove are layered over a foundation of toasted bread crusts and dark caramel. On the palate, the dark roasted malts provide a gentle toasted character without harshness, finishing with a creamy, effervescent fullness that lingers pleasantly. It is a satisfyingly complex dark wheat ale with a notable sweetness.
Appearance. Dark mahogany brown (SRM 18-23). Features a very thick, moussy, and long-lasting off-white to light-tan head with excellent lacing. Typical wheat haze is present, giving the beer a characteristic matte shine.
Aroma. Moderate to high intensity. Dominant esters of ripe banana and phenols of spicy clove are well-balanced. Support comes from a rich malt backbone of toasted bread crust, caramel, and a light doughy wheat character. No significant hop aroma.
Taste. Initial impression is malty-sweet, featuring soft bready wheat and rich caramel flavors. Moderate banana and clove yeast characters are well-integrated. Despite the dark color, there are no strongly roasted or burnt flavors, only a touch of roasty dryness in the finish. Bitterness is very low, allowing the malt and yeast complexity to lead. The aftertaste is clean with a lingering bready richness.
Mouthfeel. Medium-full body with a fluffy, creamy texture. High carbonation provides an effervescent, lively sensation on the tongue. A light, well-integrated alcohol warmth is present due to the 6.2% ABV.
