Eik & Tid Syr presents a sophisticated interpretation of a Straight Sour Beer, elevated by six months of maturation in wooden barrels. A vibrant, clean lactic acidity defines the sensory profile, reminiscent of freshly squeezed lemon and tart green apple. Underneath the sharp sourness, the pale malt backbone provides a delicate foundation of crackery and bready notes. While the barrel aging contributes a faint tannic structure and a hint of soft vanilla, it remains secondary to the bright fruit esters. This effervescent ale balances its brisk tartness with a remarkably dry finish, offering a crisp, refreshing, and highly refined experience.
Appearance. SRM 2-3; large, dense white head with poor retention; clarity ranges from clear to a slight haze.
Aroma. Moderately-high intensity; dominant sharp lactic sourness; low biscuity and crackery pale malt; pronounced citrusy lemon and tart apple esters; subtle woody undertone from barrel aging; no hop aroma.
Taste. Clean, intense lactic sourness dominates the palate; complementary bready and grainy malt flavors; moderate citrusy lemon and tart apple fruitiness; undetectable hop bitterness; finish is crisp and dry; no hop flavor.
Mouthfeel. Light body; high carbonation; effervescent; subtle alcohol warmth; crisp acidity; very light tannic astringency from wooden barrels.
