This Appalachian-style Cold Rye IPA offers a crisp, modern interpretation of the American IPA. The sensory profile is defined by a lean, ultra-clean malt base that allows assertive hop character to take center stage. Vibrant aromas of resinous pine and bright citrus are backed by a distinctive peppery spice derived from the rye. On the palate, the bitterness is firm and clean, slicing through delicate, grainy notes. The cold fermentation technique ensures a bone-dry finish and sharp clarity, highlighting a rustic grain complexity alongside pungent hops for a refreshing, high-attenuation experience that remains light on its feet.
Appearance. Pale gold to light amber (6–8 SRM). Brilliant clarity with a tall, persistent white head that leaves delicate lacing on the glass.
Aroma. High intensity hop aroma featuring notes of crushed pine needles, lemon zest, and a hint of tropical melon. A low, clean, bready maltiness is present, uniquely accented by a subtle, earthy, and spicy rye signature. Fermentation is exceptionally clean with no perceptible esters.
Taste. Initial impression is a burst of hop-driven citrus and resin. The malt profile is light and crackery, featuring a prominent spicy rye flavor that adds complexity without weight. Bitterness is high and crisp, leading to a very dry, clean finish. The aftertaste lingers with a refreshing hoppy bite and a touch of peppery grain.
Mouthfeel. Medium-light body with a crisp, effervescent mouthfeel driven by moderately high carbonation. Very smooth with no astringency; a faint, clean alcohol warmth is well-integrated.
