This Belgian Tripel presents a sophisticated interplay between traditional monastic character and subtle American hopping. The sensory journey is led by a vibrant bouquet of stone fruits, specifically peach and apricot, which are seamlessly integrated with piquant yeast-derived phenols of clove and cracked black pepper. While the alcohol reaches a potent strength, its warmth remains hidden behind a remarkably dry finish and an effervescent lift. A light, honey-like Pilsner malt foundation supports the delicate citrus notes of the American hops, creating a complex yet dangerous drinkability. It is a harmonious and mystical expression of the style, balancing spicy depth with a clean, crisp, and refreshing conclusion.
Appearance. Deep yellow to pale gold (6 SRM) with brilliant clarity and high effervescence. Features a dense, rocky, long-lasting white head that leaves persistent lacing on the glass.
Aroma. High intensity with a seamless bouquet of spicy phenols—notably clove and black pepper—balanced by prominent fruity esters of peach and apricot. A soft, grainy-sweet Pilsner malt character provides a honey-like background, complemented by a low, floral, and citrusy American hop presence.
Taste. Initial impressions of light, grainy malt sweetness are quickly overtaken by a complex wave of peach and apricot esters. Middle palate brings assertive spicy phenols of clove and pepper.
