This collaboration reimagines the Berliner Weisse through the lens of Spanish Patxaran. It presents a vibrant, tart profile where sharp lactic acidity meets the dark, plum-like character of sloe berries. The aroma is complex, featuring prominent herbal anise and woody cinnamon that weave through a base of raw bread dough and grainy wheat. On the palate, the sloe berries provide a deep fruitiness and subtle tannic structure, balanced by the cooling spice of anise. Effervescent and remarkably crisp, it finishes bone-dry with a lingering botanical essence, masking its elevated strength with refreshing acidity and a clean fermentation profile.
Appearance. Deep pink to light ruby (8–12 SRM) from sloe berries; clarity ranges from clear to a slight haze. Large, pink-tinted head with moderate retention and high effervescence.
Aroma. High intensity; dominant sharp lactic sourness with a moderately high fruit character of sloe berries and dark plum. Distinct herbal anise and spicy cinnamon are well-integrated. Light bready wheat malt and a subtle floral note; no hop aroma.
Taste. Initial impression of clean lactic sourness and tart sloe berries. A light bready and grainy wheat flavor provides a brief malt backbone before the herbal anise and woody cinnamon notes emerge. Bitterness is undetectable; balance is driven entirely by acidity and spice. Finish is very dry and crisp with a lingering fruit skin and botanical aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation level. Crisp acidity provides a sharp bite on the tongue. Very low sensation of alcohol warmth despite the elevated ABV for the style.
