Eastside Brewing Terzo Grado

Imperial IPA 10.5 º
Terzo Grado is a formidable Double IPA that belies its 10.5% ABV with remarkable dryness and drinkability. It presents a vibrant, fruit-forward profile reminiscent of a fresh fruit salad, led by distinct notes of peach, passion fruit, and grapefruit. Hints of mango and tart gooseberry add complexity, supported by a soft, biscuity malt backbone. The experience transitions into a resinous and citrus-jam intensity on the palate, culminating in a firm, lingering bitterness that remains smooth rather than harsh. Despite its strength, the finish is exceptionally clean and dry, making it an assertive yet elegant expression of modern hopping.
Appearance. Gold color (6–8 SRM). Brilliant clarity with a compact, white, and very persistent foam head that exhibits excellent lacing.
Aroma. High intensity hop aroma with a pungent, fresh character. Dominated by tropical fruit including peach, passion fruit, and grapefruit, with supporting notes of mango, citrus, and gooseberry. Low, clean, biscuity malt presence in the background. Alcohol is well-masked and clean with low fermentation esters.
Taste. Initial soft, biscuity malt flavor is quickly overtaken by an explosion of tropical fruit, resin, and citrus jam. High bitterness that is intense and long-lasting but remains smooth on the palate. Finishes extremely dry with a lingering, hoppy aftertaste. Fermentation is clean with moderate to high hop-derived fruitiness.
Mouthfeel. Medium-full body with a smooth, velvety texture. Moderate carbonation. Despite the high alcohol content, the warmth is surprisingly restrained and well-integrated. No hop-derived astringency.

L' aroma al naso è pungente e fresco, paragonabile ad una macedonia di frutta in cui pesca, passion fruit e pompelmo sono in evidenza rispetto al resto del bouquet olfattivo in cui si può riscontrare mango, agrumi e uva spina. Al palato l’imbocco è morbido e lievemente biscottato. Si susseguono in alternanza frutta tropicale, resina e scorza di agrumi. L’amaro è intenso e persistente ma mai esagerato o sgradevole. Il tenore alcolico è ben nascosto e la carbonazione moderata unita all’estrema secchezza facilitano la bevuta.

Il birrificio consiglia l'abbinamento con con carni cotte al barbeque in stile americano come pulled pork, smoked ribs e brisket o comunque carni succulente precedentemente marinate. In questo modo la speziatura si legherà al sapore della birra e la componente grassa della carne sarà ripulita dal palato tramite l’amaro.
