This Imperial Stout presents a decadent sensory landscape, driven by the intense addition of Vietnamese coffee from Aliena roastery. The profile opens with deep-roasted malt layers of dark chocolate and espresso, further enriched by the earthy, fatty richness of cocoa nibs. Oak cubes provide a structural woodiness, while the cordial infusion introduces a subtle, herbal-sweet complexity and a touch of refined fruitiness. The high ABV manifests as a smooth, integrated warmth, supporting a velvety texture. It is a harmonious marriage of specialty adjuncts and a robust, full-bodied base, resulting in a sophisticated, lingering finish of mocha and toasted oak.

Appearance. Opaque, deep ebony to jet black (40+ SRM). It pours with a thick, persistent, tan-to-mocha colored head that leaves dense lacing. Clarity is opaque.

Aroma. High intensity. Dominant aromas of freshly roasted Vietnamese coffee and dark chocolate from the cocoa nibs. The base style contributes notes of toasted bread, burnt sugar, and dried dark fruits. There is a distinct woody, vanilla-edged oak presence, complemented by a subtle, sweet herbal note from the cordial-soaked oak. Low earthy hop aroma.

Taste. Initial flavors of bittersweet chocolate and intense espresso transition into a mid-palate of charred grain and molasses. The cordial-soaked oak adds a layer of botanical sweetness and refined wood tannins. Hop bitterness is moderate-high but well-balanced by the residual malt sugar and the inherent bitterness of the coffee and cocoa. The finish is long and warming, with lingering notes of dark-roast coffee and fine liqueur.

Mouthfeel. Full-bodied and viscous with a creamy, velvety texture. Carbonation is moderate-low, enhancing the richness. A significant, well-integrated alcohol warmth is present. Very low astringency from the oak and dark malts.

Versata nel bicchiere si presenta di un colore scuro, nera con schiuma color nocciola; avvicinandosi al bicchiere si viene sin da subito travolti dall’aroma, caratterizzato da intense note di caffè e sentori di cioccolato che lasciano pian piano spazio a note più fresche ed erbacee di luppolo. Al palato il sorso è setoso e la bevuta appagante, anche qui inizialmente predominano le note tostate di caffè e cioccolato che ben supportano i sentori più alcolici, speziati ed agrumati dati dal Cordiale. Da non perdere.
