Pesi Massimi is a contemporary Belgian Tripel that emphasizes extreme attenuation and a modern hop profile. Utilizing Ekuanot hops exclusively, it presents a sensory bridge between traditional monastic yeast character and New World aromatics. Expect a bouquet of spicy, peppery phenols integrated with Ekuanot’s signature notes of papaya, lime zest, and subtle herbal sage. The palate is defined by its remarkable dryness, delivering a crisp, cracker-like malt foundation that quickly gives way to a sharp, assertive bitterness. Despite its 9% ABV, the alcohol remains masterfully hidden, finishing exceptionally dry with a lingering citrusy and peppery aftertaste that invites another sip.
Appearance. Deep gold (6 SRM) with brilliant clarity. Pours with a massive, rocky, long-lasting white head that leaves dense, intricate Belgian lace on the glass as it slowly recedes.
Aroma. Moderate to high intensity. Complex esters of orange peel and papaya meet spicy, peppery yeast phenols. The Ekuanot hops provide distinct layers of melon and lime over a background of soft, grainy-sweet Pilsner malt. Alcohol is very subtle, manifesting only as a light floral perfume.
Taste. Initial impression of soft graininess followed immediately by a wave of spicy yeast and tropical fruit. Hop flavors of lime and berry are prominent, supported by a firm, sharp bitterness that defines the structure. The finish is remarkably dry and clean, with a lingering peppery phenol and a slight herbal note from the Ekuanot hops.
Mouthfeel. Medium-light body, feeling surprisingly light for its high gravity. High, effervescent carbonation provides a prickly sensation on the tongue. Alcohol warmth is deceptive and very low, contributing to high drinkability without any harshness or astringency.
