Eastside Brewing Great Knollsy

Imperial IPA 7.5 º 20 IBU
This Double IPA showcases a vibrant, modern hop profile powered by Phantasm and Cryo hops. The Phantasm addition unlocks intense tropical thiol aromas, leading with a burst of passionfruit, white grape, and guava. These are supported by concentrated resinous and citrus notes from the Cryo hops. While the 7.5% ABV provides a subtle warmth, the beer maintains a high level of drinkability with a clean, lean malt backbone that allows the hop intensity to dominate. It finishes dry and crisp with a firm, lingering bitterness that defines the style's assertive character.
Appearance. Deep gold to light orange (SRM 7-9) with a moderate-sized, persistent white head that leaves significant lacing. Modern clarity allows for a slight, attractive haze from heavy dry-hopping.
Aroma. High intensity hop-forward bouquet characterized by tropical fruit dominance—notably passionfruit, guava, and grapefruit. Subtle resinous pine and floral notes emerge from the Cryo hops, backed by a very low, clean, grainy malt sweetness and neutral fermentation character.
Taste. Assertive hop flavors of tropical fruit and citrus pith lead the palate, followed by a clean, supporting malt profile that suggests cracker and light bread. Bitterness is high but smooth, lacking any vegetal harshness. The finish is decisively dry with a long-lasting, resinous aftertaste.
Mouthfeel. Medium body with a smooth texture. Carbonation is moderate-high, providing a crisp bite that accentuates the dryness. A light, well-integrated alcohol warmth is present but restrained.
