Another Sunrise is a sophisticated Grape Ale that bridges the gap between rustic wild ales and fine sparkling wine. Fermented with a Belgian Strong Ale yeast and matured with a blend of three Brettanomyces strains, it offers a complex profile defined by notes of weathered hay and barnyard funk. The integration of 10% Ottonese grape must provides a delicate floral and mineral backbone, while the addition of 80 grams per liter of apricot puree introduces vibrant, fleshy stone fruit brightness. At 6.6% ABV, this ale balances its funky fermentation character with elegant acidity, resulting in a bone-dry, effervescent, and deeply aromatic sensory experience.
Appearance. Deep gold to light orange (5-7 SRM) with a slight haze from the apricot puree. Pours with a moderate white head that shows fair retention and leaves a fine collar of lacing.
Aroma. High intensity featuring prominent fresh apricot and floral Ottonese grape notes. The fermentation profile is complex, displaying spicy phenols from the Belgian Strong Ale yeast and a distinct Brettanomyces character of leather and horse blanket. Malt is low and cracker-like.
Taste. Initial impression is a sharp, refreshing tartness from the apricot and grape acidity. Flavor is dominated by stone fruit and vinous qualities, supported by a neutral, lean malt backbone. Hop bitterness is low, allowing the dry, funky Brett character and peppery yeast spice to lead into a bone-dry, lingering finish with a touch of fruit skin tannin.
Mouthfeel. Medium-light body with high, champagne-like carbonation that enhances the perceived dryness. Alcohol warmth is very light and well-integrated. No significant astringency despite the high fruit concentration.
