This sophisticated Heritage Cider showcases a vinous complexity achieved through a meticulous five-month cool fermentation. The 50/50 blend of local varieties and Dabinett apples creates a striking sensory balance. It opens with the signature spicy and earthy aromatics of Dabinett, layered over the bright, clean orchard notes provided by the local fruit. On the palate, the experience is uncompromisingly dry, highlighting a sharp, angular acidity that yields to a structured, mildly tannic finish. This structural depth, reminiscent of a fine dry white wine, lingers elegantly, inviting the next sip with a refreshing and crisp clarity that reflects its long maturation in steel tanks.
Appearance. Pale gold to amber (SRM 4-7). Brilliant clarity with a crystal-clear presentation. Minimal to no head formation, typical of the style, with light effervescence visible.
Aroma. Moderate to high intensity. Prominent fresh, tart apple notes blended with the complex, slightly spicy and leathery aromatics of bittersweet apples. Very clean fermentation profile without sulfur; subtle earthy and floral undertones emerge as it warms.
Taste. Initial impression is sharply acidic and bright. Robust apple flavor persists, transitioning from fresh, zesty fruit to the more complex, slightly phenolic character of the Dabinett variety. Bone dry with no residual sugar. Bitterness is low, but the fruit provides a clear tannic structure. The finish is clean, dry, and moderately lingering.
