Sad Wings is a monumental Imperial Stout that has matured for a full year in Heaven’s Hill bourbon barrels, resulting in an exceptionally deep sensory profile. The pour is an opaque, midnight black with a persistent dark tan head. Intense aromas of bittersweet chocolate, espresso, and black licorice meld seamlessly with the barrel’s contribution of toasted oak, spicy bourbon, and rich vanilla. On the palate, a complex wave of charred grain and dark fruit esters—reminiscent of raisins and figs—is balanced by firm bitterness. The extended aging creates a velvety, harmonious finish where alcohol warmth and wood tannins provide structure to the luscious, chewy body.
Appearance. Jet black and fully opaque (SRM 40+). Features a dense, creamy, deep tan head with moderate retention and visible legs due to the high alcohol content and viscosity.
Aroma. High intensity. A complex bouquet of roasted coffee, dark cocoa, and molasses. The Heaven’s Hill barrels introduce prominent notes of vanilla, toasted coconut, and aged bourbon, complemented by dark fruit esters like prunes and black currants.
Taste. Rich and layered initial impression of roasted malt, dark chocolate, and tar. The mid-palate reveals bourbon-soaked oak, caramel sweetness, and a hint of licorice. Bitterness is firm but well-integrated, leading to a long, warming finish with lingering notes of dark grain and spirits.
Mouthfeel. Full to very full-bodied with a luscious, velvety texture and low to moderate carbonation. A smooth, well-integrated alcohol warmth is present, reflecting its year of maturation.
