This Wild Specialty Beer is a vibrant, acidic powerhouse built on a massive harvest of hand-pitted plums. A rigorous 72-hour kettle souring process delivers a sharp, clean lactic punch, beautifully countered by the structural weight of 8% ABV and a smoothing bitterness. The addition of Sabro (Cryo) hops during a double dry-hop stage introduces exotic layers of coconut and tropical fruit that intertwine with the juicy, tart stone fruit character. The result is a complex, high-gravity sour that balances intense acidity with aromatic depth, finishing dry with a lingering essence of sun-ripened plum skins and tropical hop oils.

Appearance. Deep amber to copper with distinct reddish-purple hues; hazy and saturated in appearance. The off-white to pale pink head has moderate initial height but fades quickly to a thin collar, leaving minimal lacing due to high acidity.

Aroma. High intensity aromatics of fresh, tart plums and dark stone fruit skins. Distinctive tropical notes of coconut, cedar, and pineapple from the dry-hopped Sabro are prominent. A clean, sharp lactic acidity underpins the fruit, with virtually no malt presence or hop grassiness.

Taste. Leading with a sharp, puckering lactic acidity that highlights the fresh plum character. The flavor moves through juicy fruit flesh into a mid-palate of coconut and cream, courtesy of the Sabro hops. A noticeable moderate bitterness and alcohol presence provide structure, tempering the intense sourness. The finish is bone-dry and highly acidic, with a lingering tartness of fruit skins.

Mouthfeel. Medium body, providing more weight than typical for the style due to the higher alcohol content. Carbonation is high and prickly. A noticeable but well-integrated alcohol warmth is present, alongside a slight skin-tannin astringency that enhances the dry finish.
