This sophisticated Wild Specialty Beer showcases a complex marriage between rustic Lambic funk and the bright acidity of barrel-aged apple cider. The addition of Gamay pomace introduces a deep vinous character, imparting notes of crushed red berries, floral violet, and a subtle earthy spice. The sensory profile is defined by a sharp, refreshing malic acidity from the cider, layered over the signature barnyard, hay, and leathery notes of the Lambic base. Oak-derived tannins from the barrel aging provide a structured backbone, while the grape skins contribute a delicate tannic grip that enhances the bone-dry, effervescent finish.
Appearance. Deep amber to ruby-tinted gold (SRM 10-14); thin, off-white to pale pink head with low retention; slight haze characteristic of a wild blend with fruit pomace.
Aroma. High intensity; dominant aromas of tart green apple and funky Brettanomyces (hay, horse blanket, wet wood); secondary notes of red currant and grape skins from the Gamay pomace; faint toasted oak and a touch of lactic sourness; malt is nearly undetectable.
Taste. Initial impression is sharply acidic and fruit-forward; prominent flavors of tart apple and vinous red grapes; mid-palate reveals complex Lambic funk including earthy soil and aged leather; hop bitterness is non-existent, replaced by a firm malic and lactic tartness; finish is exceptionally dry and lingering with a puckering, vinous aftertaste.
Mouthfeel. Medium-light body; moderate to high carbonation with a prickly, effervescent feel; noticeable alcohol warmth that is well-integrated; moderate astringency from the Gamay pomace and oak aging.
