Duration Brewing Tracing Time

This intriguing Belgian Dark Strong Ale showcases a complex interplay of classic monastic depth and unique dark-roasted nuance. Inviting aromas of rich anise and deep licorice mingle with a distinct roasty char. On the palate, a silky, velvety texture unfolds, delivering lush stone fruit flavors like plum and dark cherry. An unexpected, refreshing tartness lifts the roasty notes, cutting through the malt richness. It finishes dry and slightly tart, accompanied by a gentle, warming alcohol glow. It is a bold, beautifully structured take on the Belgian Dark Strong Ale style, balancing dark malt indulgence with a crisp, complex finish.
Appearance. Deep coppery-brown to dark chestnut with brilliant clarity. Pours with a thick, dense, persistent cream-colored head that leaves delicate lacing on the glass.
Aroma. High intensity. Prominent dark malt character features deep bready-toasty richness, heavily accented by distinct roasted char and dark anise and liquorice notes. Yeast-derived esters deliver sweet notes of dark stone fruits, particularly plums and dried cherries, balanced by a subtle black pepper phenol. Low spicy hop aroma and a soft, well-integrated alcohol warmth are present in the background.
Taste. Initial impression of rich, caramelized malt sweetness is immediately met by a dry, roasty char. Complex stone fruit flavors of plum and apricot emerge, accompanied by deep liquorice. A unique, clean tartness lifts the dark malts, balancing the low-to-medium bitterness. Finishes dry and slightly tart with a lingering, pleasant roasted-grain character and a gentle alcoholic warmth.
Mouthfeel. Medium-full, silky, and remarkably smooth. High carbonation that feels lively but not sharp. Delivers a mild, comforting alcohol warmth with very low astringency despite the charred malt notes.
