This collaborative Wild Specialty Beer from Duration and Fonta Flora delivers a masterclass in patience, having rested in foeders for 19 months following a spontaneous coolship fermentation. A vibrant, layered sensory experience emerges, dominated by the dual addition of sweet and sour cherries that impart deep red fruit depth without residual sugar. The prolonged wood aging introduces structural oak tannins and subtle vanillins that mesh with complex Brettanomyces funk—think earthy leather and soft barnyard notes. It is bright, acidic, and profoundly dry, showcasing a sophisticated balance between sharp stone fruit acidity and the rustic, nuanced character of extended wild maturation.
Appearance. Displays a brilliant deep ruby to garnet hue with soft pink highlights. The head is a light pinkish foam that recedes relatively quickly to a thin collar, leaving minimal lacing. Clarity is mostly clear with a very slight, hazy particulate shimmer characteristic of long aging.
Aroma. High intensity and multifaceted. Initial hits of bright, lactic acidity and sharp sour cherry are softened by deeper, jammy sweet cherry notes. Underneath, the wild fermentation provides leather, hay, and a distinct earthy funk. The 19-month foeder residence adds a supporting layer of toasted oak, aged wood, and a faint hint of marshmallow.
Taste. A sharp, clean lactic sourness leads the palate, immediately followed by the complex flavor of fermented cherries—retaining the skin and pit character while losing the sugar. Mid-palate reveals oak-derived tannins and a rustic, spicy Brett character. Malt is a background player, providing just enough cracker-like structure. The finish is bone-dry and lingering with a tart, fruit-skin acidity.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the perceived acidity. There is a notable but pleasant tannic astringency from both the cherry skins and the long foeder aging. Alcohol warmth is very low and well-integrated.
