Dunham Tropicale IPA
This American IPA delivers a vibrant sensory experience, blending the rustic edge of 100% Brettanomyces claussenii fermentation with a lush tropical bounty. The aroma is an explosion of mango, guava, and passion fruit, underpinned by the distinctive pineapple and subtle earthy notes of the wild yeast. On the palate, Mandarina Bavaria and Mosaic hops contribute layers of tangerine and dark berry, while the T.N.T. hop blend reinforces the intense fruit profile. A crisp, dry finish highlights the synergy between the citrus zest and the fruity esters, making for an exceptionally refreshing and complex interpretation of the style.
Appearance. Medium gold (8 SRM) with a slight haze from fruit solids and dry-hopping. Features a medium-sized, creamy white head with excellent persistence and intricate lacing.
Aroma. High intensity featuring a tropical fruit bouquet of mango, guava, and passion fruit. The Brettanomyces claussenii adds secondary pineapple and faint rustic earthiness. Hop character is prominent with tangerine citrus and floral berry notes. Low, clean, grainy maltiness remains in the background.
Taste. Initial impression is a surge of juicy tropical fruits and bright tangerine. Hop flavor is high, mirroring the aroma with citrus and berry notes from Mosaic and Mandarina Bavaria. Bitterness is firm and medium-high (approx. 50-60 IBU). The finish is remarkably dry and clean, leaving a lingering aftertaste of citrus zest.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high, providing a lively sensation. Very light, smooth alcohol warmth is present.
