Brasserie Dunham’s The Red Sashes 2015 is a monumental Alternative Grain Beer that pushes the boundaries of a Rye Wine. A double-mash process yields a liqueur-like density, where the distinctively peppery character of rye is enriched by an intricate barrel program involving red wine, cognac, and Armagnac. The presence of Brettanomyces introduces a sophisticated rustic funk and bright apricot esters, cutting through the heavy malt sweetness. Expect a complex interplay of spicy grain, dark vinous fruit, and spirit-driven vanilla, concluding in a warming, acid-brightened finish that highlights both the brewer's technical prowess and the transformative power of extended wood aging.
Appearance. Deep mahogany to burnt copper (SRM 18-24) with a persistent hazy veil from the high rye content. It pours with a thin, tan-colored head that recedes quickly to a fine collar, leaving light lacing despite the high alcohol concentration.
Aroma. High intensity and deeply layered. Forward notes of spicy rye and cracked pepper mingle with dried apricot and floral hops. The barrel influence is profound, offering aromatic hits of boozy cognac, plum-heavy red wine, and a touch of Armagnac-derived vanilla, all underpinned by a leathery, earthy Brettanomyces funk.
Taste. Initial impression of rich, syrupy malt and dark stone fruits is immediately countered by a sharp, sour acidity and peppery rye spice. Flavors of dark cherry and oak tannins from the wine barrels provide structure, while cognac notes add depth. The finish is long and complex, balancing lingering sweetness with a clean, tart edge and spicy grain character.
Mouthfeel. Full-bodied and viscous, bordering on creamy thanks to the rye's protein content. Carbonation is moderate to low. A significant and well-integrated alcohol warmth spreads across the palate, reflecting its high gravity without becoming harsh or fusel.
