Dunham Imperial Black IPA
Brasserie Dunham’s Imperial Black IPA offers a bold sensory bridge between a robust stout and a high-gravity American IPA. The experience is led by an intense resinous and piney hop profile, layered over deep citrus notes. Beneath the aggressive hop character, a rich and creamy malt backbone provides structural support, featuring refined chocolate and toasted grain nuances without becoming overly acrid or ashy. This Cascadian Dark Ale delivers a complex interplay where the dark, mahogany-black depths of a stout meet the sharp, lingering bitterness of a double IPA, resulting in a velvety yet hop-forward finish that showcases both power and refinement.
Appearance. Opaque, deep ebony to black (SRM 38). Thick, persistent light tan head with excellent lacing.
Aroma. High intensity; dominant resin, pine needles, and grapefruit zest. Secondary notes of dark chocolate, toasted bread, and a faint hint of coffee. Clean fermentation with no significant esters.
Taste. Initial punch of pine and resinous hops followed by a sharp, high bitterness. Mid-palate reveals smooth roasted malt, cocoa, and subtle caramel. No harsh burnt character. Finishes dry and bitter with a lingering citrus peel aftertaste.
Mouthfeel. Medium-full body with a notable creaminess. Moderate carbonation. Smooth texture with a pleasant, well-integrated alcohol warmth consistent with its strength.
