This Brett Beer is a sophisticated blend of a propolis-infused ale and an American Pale Ale, transformed by extended maturation in Zinfandel barrels. It opens with a vibrant, zesty nose where rustic Brettanomyces notes of sun-dried hay and earth meet floral hop accents. The oak aging imparts a delicate vinous character, reminiscent of dark berries and soft tannins, which complements the bright citrus profile of the base ales. On the palate, it is exceptionally dry and refreshing—a true ‘bière de soif’—balancing a moderate hop bitterness with a complex, fruity finish. The interplay between the vinous wood and the wild yeast creates a layered, highly drinkable profile.
Appearance.Deep gold to pale copper (7–12 SRM) with a slight, persistent haze characteristic of Brettanomyces fermentation. It pours with a frothy, off-white head that shows moderate retention and leaves light lacing.
Aroma.Moderate to high intensity. Dominated by fruity esters of apricot and lemon zest, supported by a rustic, earthy funk and light notes of wet hay. Subtle floral and citrus hop aromas mingle with a distinct vinous oak presence and a hint of red grape from the Zinfandel barrels.
Taste.The initial impact is bright and dry. A lean malt profile provides a clean backdrop for complex fruitiness—lemon zest, stone fruit, and a touch of red berry. Moderate hop bitterness is present but well-integrated. The finish is crisp, bone-dry, and lingering, with a mild woody tannin and a rustic, farmhouse-style funk that persists without becoming medicinal or harsh.
