This Weissbier presents a classic foundation of bready wheat and soft Pilsner malt, distinguished by a moderate fermentation profile of ripe banana and spicy clove. The unique addition of a juniper branch decoction introduces a subtle, rustic resinous depth and an earthy, herbal complexity that complements the yeast-driven esters. Appearance.Pale straw to deep gold (3-6 SRM). Displays a very thick, moussy, and long-lasting white head with excellent lacing. The body is hazy with a characteristic protein and yeast sheen.
Aroma.Moderate to high intensity. Dominant banana esters and clove-like phenols are well-balanced by bready, doughy, and grainy wheat malt. A distinctive, light resinous and woody aroma from the juniper branches adds a rustic herbal layer.
Taste.Soft, bready wheat and grainy-sweet Pilsner malt flavors lead the palate. Banana and clove yeast character is prominent but not extreme, supported by very low bitterness.
