The aromatic profile is dominated by the tropical intensity of Galaxy, yielding notes of passionfruit and peach, while Idaho 7 contributes sharp tangerine and a resinous pine backbone. Fermentation with a house Brettanomyces culture introduces a distinctive funky undercurrent of pineapple and earthy leather that complements the English ale yeast esters. This American IPA offers a firm bitterness and a lean malt profile, finishing exceptionally dry and crisp. It is a nuanced, layered experience that balances aggressive New World hopping with a wild, evolving character.

Appearance. Pours a medium gold with a slight haze. Topped by a medium-sized, off-white head with good persistence and delicate lacing. Color approximately 7-9 SRM.

Aroma. High intensity hop aroma featuring tropical passionfruit, peach, and tangerine from Galaxy and Idaho 7 hops. A distinct house Brettanomyces character adds layers of pineapple funk, light leather, and earthy spice. Clean, grainy malt notes remain in the background with moderate fruity esters from the English ale yeast.

Taste. Leading with a firm, high bitterness, the flavor follows with intense notes of tropical fruit and resinous pine. The Brettanomyces influence provides a slight rustic funk and a drying quality that emphasizes the hop character. Low grainy malt sweetness supports the palate, leading to a very dry, hoppy, and lingering bitter finish with no harshness.
