This rustic Saison offers a complex sensory tapestry woven from heirloom grains and forest infusions. The aroma is a bright collision of citrusy hops and peppery yeast, underscored by a unique, woodsy freshness from the silver birch infusion. On the palate, the interplay of nutty spelt and spicy rye creates a robust, grainy foundation that supports a firm hop bitterness. Notes of green sap and herbal tea emerge from the birch, leading into an exceptionally dry, effervescent finish. It is a refreshing, highly attenuated ale that perfectly balances traditional farmhouse character with a distinctively crisp, arboreal edge.
Appearance. Pale gold with a slight orange hue (6 SRM). Displays a hazy, unfiltered appearance topped by a dense, rocky ivory head with excellent retention and persistent Belgian lace.
Aroma. Moderate to high intensity. A complex bouquet of fruity esters—lemon zest and green apple—mingles with spicy black pepper phenols. A notable herbal, woodsy scent from the silver birch provides a unique top note, while the rye and spelt contribute a subtle, earthy, and grainy malt backdrop.
Taste. Initial impression is exceptionally dry and crisp. Malt flavors of bready spelt and spicy rye are prominent, balanced by moderate hop bitterness and citrusy hop flavor. The silver birch provides a lingering, tea-like herbal complexity. Fermentation character is expressive, featuring peppery spice and faint stone fruit. The finish is short, very dry, and bracingly bitter.
Mouthfeel. Light to medium-light body with a slightly creamy texture derived from the rye and spelt. Carbonation is very high, producing an effervescent, prickly sensation. Alcohol warmth is very low and well-integrated.
