The 'Sorbet' character contributes a smooth, slightly more substantial body than a typical Straight Sour Beer, supported by a subtle, crackery pale malt backbone. Effervescent and crisp, it balances intense fruit-forward tartness with a clean, off-dry finish, delivering a modern, fruit-heavy interpretation that remains focused on a sharp, non-funky fermentation profile.

Appearance. Deep ruby to garnet red (20+ SRM) with a heavy haze bordering on opaque; moderate, frothy pinkish head with fair retention and light lacing.

Aroma. High intensity; dominant sharp, clean lactic sourness followed by bold notes of tart blackberry, red grape, and orange peel. Very low biscuity malt presence; no hop aroma or fermentation funk.

Taste. Initial impression is of an intense but clean lactic tartness. A medley of tart red fruit and citrus zest flavors is supported by a light, crackery malt flavor. Hop bitterness is undetectable (3-8 IBU range). The finish is crisp, acidic, and off-dry with a lingering tart berry aftertaste.

Mouthfeel. Medium body with a notable creaminess and smooth texture; moderate to high carbonation provides a refreshing prickle; no noticeable alcohol warmth; moderate acidity without astringency.
