Tropic Sunset is a vibrant Wild Specialty Beer that captures a twilight aesthetic through a complex blend of blood orange, peach, and raspberry. The sensory experience begins with a striking pinkish-orange hue, reminiscent of its namesake. On the nose, an intense bouquet of tart berries and citrus zest mingles with a subtle stone fruit sweetness. The palate is defined by a clean, sharp acidity from Lactobacillus fermentation, which highlights the jammy raspberry and the bright, pithy character of blood orange. A soft peach undertone provides a rounded mid-palate, leading to a bone-dry, refreshing finish that invites another sip.
Appearance. Deep pink to light salmon hue (SRM 6-10) with a slight haze. Pouring produces a light pink, fine-beaded head with moderate to low retention, leaving minimal lacing due to fruit acids and oils.
Aroma. High intensity aromatics dominated by fresh raspberry tartness and the citrusy, floral punch of blood orange. Secondary notes of fuzzy peach skin and a clean, sharp lactic tang. Malt is nearly absent, and hop character is nonexistent.
Taste. Initial impression is briskly sour. Vibrant raspberry and tangy blood orange flavors are front and center, supported by a mellow, fleshy peach character. No hop bitterness is perceived. The fermentation is clean with no funk or acetic notes. Finishes very dry and crisp with a lingering berry zest and citrus acidity.
Mouthfeel. Light body with high carbonation that provides a prickly, effervescent sensation. No alcohol warmth is perceived at 4.5% ABV. A slight, pleasant astringency from the fruit skins and acidity enhances the dry finish.
