Saint Bard is a decadent, viscous Imperial Stout that masterfully integrates a complex array of adjuncts through Kentucky Bourbon barrel aging. The sensory journey is dominated by the bright, floral notes of Geisha Natural coffee from Finca la Terra, which pierces through a dense backdrop of bittersweet cocoa nibs and creamy vanilla. Massive amounts of toasted coconut provide a tropical, nutty depth, while the bourbon barrels impart charred oak and sweet caramel undertones. This neo-old-school stout balances intense roasted malts with a rich, velvety sweetness, resulting in a harmonious yet powerful expression of dark chocolate and barrel-matured complexity.
Appearance. Jet black and opaque (40+ SRM). Pours with a thick, deep tan to dark brown head with moderate retention. High viscosity is evident by the thick, slow-moving legs on the glass.
Aroma. High intensity. A complex blend of rich roasted malts, espresso-like coffee, and dark chocolate. The Geisha Natural coffee adds unique floral and stone fruit notes. Strong toasted coconut and vanilla sweetness are prominent, complemented by Kentucky Bourbon notes of oak, caramel, and a noticeable but smooth alcohol presence. Low dark fruit esters like plum or raisin are buried in the background.
Taste. Bold and multifaceted initial impression. Deep layers of roasted grain and cocoa nibs transition into creamy vanilla and rich toasted coconut. The coffee provides a sophisticated acidity and berry-like fruitiness. Bitterness is moderate to high but balanced by significant residual sweetness and barrel-derived vanillin. The finish is long, warming, and bittersweet, featuring lingering notes of charred oak, dark chocolate, and roasted coffee.
Mouthfeel. Very full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present and noticeable, yet well-integrated without being harsh or solventy.
