This Straight Sour Beer presents a vibrant sensory journey, defined by a sharp, lemony lactic bite from the house Lactobacillus culture. The addition of Idaho 7 hops introduces an aromatic layer of stone fruit and tropical resin, perfectly complementing the bright, fragrant punch of yuzu zest and juice. While the base is lean and crisp, the inclusion of rice provides a distinctive, silky smoothness to the palate that softens the acidity. Effervescent and refreshing, it balances the Americana influence of bold hopping with a clean, Japanese-inspired citrus profile, finishing bone-dry with a lingering essence of tart citrus and apricot.

Appearance. Pale straw (3 SRM) with a slight haze from dry hopping and rice proteins. Large, dense, white head with moderate to poor retention, typical of the style.

Aroma. High intensity lactic sourness leads, followed immediately by bright, aromatic yuzu zest and juice. The Idaho 7 hops contribute subtle stone fruit and tropical notes. Malt is low, presenting as clean, crackery, and neutral.

Taste. Sharp, clean lactic sourness dominates the initial impression. Flavors of tart yuzu citrus and tropical apricot from the Idaho 7 hops provide complexity. Hop bitterness is undetectable, while the malt profile is light and bready. The finish is very dry and crisp with a lingering citrus acidity.

Mouthfeel. Medium-light body with a unique, silky creaminess attributed to the rice. Carbonation is high and effervescent. Alcohol warmth is light and well-integrated. Crisp, refreshing acidity with no astringency.
