Appearance. Pale gold to light amber (5-7 SRM) with a persistent haze from coconut and fruit solids. The head is white and dense but dissipates quickly due to the high alcohol content and adjunct oils, leaving minimal lacing.
Aroma. High intensity; a sharp, clean lactic sourness is immediately present, followed by a burst of fresh pineapple and rich, toasted coconut. Fiji Rum barrel aging contributes complex layers of sweet orange zest, vanilla, and light oak. No hop aroma is present.
Taste. Intensely sour initially with a crisp lactic bite. This is quickly balanced by sweet, juicy pineapple and a heavy, creamy coconut presence. The mid-palate reveals rum-derived notes of burnt sugar and citrus. The finish is lush and off-sweet, contrasting with the style’s typical dryness, showing great complexity between fruit and barrel. Hop bitterness is undetectable.
Mouthfeel. Full-bodied and viscous with a notably creamy and coating texture. Carbonation is moderate. Significant alcohol warmth is present but smooth and well-integrated.

Before everything stopped, there were beer festivals. (Oh, how we long for beer festivals.) One that we, in particular, remember is Wakefest in Miami, 2019. The sun was shining, the beer was flowing, and everyone was there! One evening, Paul Jones of Cloudwater invited us out for drinks. He’d heard of a place in Miami Beach that served the best Piña Colada. And, when we say the best, we mean the best. We went, we drank, we got blown away. It was the best! Thinking about all our trips, we could never get that drink out of our heads. How could we drink it again? What was in it? Why not make it into a beer? Why not indeed. Cocktail was born, and so was the idea of keeping the beer in barrels. Rum barrels from Fiji which give the beer a sweet orange tone. Juicy!
