This session-strength Saison offers a rustic, farm-driven profile, utilizing organic Asturian spelt, known as escanda, to provide a soft, grainy backbone. Fermentation with ambient cider-house yeast via coolship introduces a complex, wild character with hints of pome fruit and a refreshing, dry acidity. The addition of fresh carrot lends an earthy depth and a faint orange hue, while natural ginger provides a bright, zesty spice that lingers into the bone-dry, effervescent finish. Truly a sparkling beer, it balances its sessionable 4% ABV with high attenuation and a vibrant, spicy-fruity yeast profile that honors its unique farmhouse origins.
Appearance. Pale orange to gold with a slight haze from the spelt and coolship fermentation; features a long-lasting, rocky white head and fine, persistent effervescence (sparkling).
Aroma. Moderate intensity with a complex blend of spicy ginger and earthy carrot; yeast-derived esters of citrus and green apple are prominent, complemented by a rustic, grainy scent from the organic spelt and a faint, wild cider-like funk.
Taste. Initial impression is bone dry and crisp. Distinct natural ginger provides a spicy warmth, supported by an earthy, root-like flavor from the carrot. The malt character is low but grainy, featuring the soft texture of escanda. Hop bitterness is moderate, though the finish is dominated by a spicy, phenolic aftertaste and a light, refreshing tartness from the ambient yeast.
Mouthfeel. Light-bodied and highly attenuated; very high carbonation creates a lively, prickly, and effervescent sensation on the palate. No alcohol warmth is present, and the finish is exceptionally clean and dry.
