This effervescent Session Saison captures the imagination with its vibrant infusion of Mexican chilies and hibiscus flower. It pours a stunning deep rose with a frothy, pink-tinted head. The aroma is a sophisticated dance of floral tartness and earthy spice, where the floral notes of hibiscus meet the subtle, dried fruit and smoky nuances of the Mexican chilies blend. On the palate, it is bone-dry and sparkling, delivering a refreshing tartness that transitions into a delicate, lingering spice. The classic peppery yeast character of the Saison style provides a rustic, grainy backbone to this highly refreshing, artisanal sparkling beer.

Appearance. Brilliant ruby-pink to deep magenta; tall, dense, rocky light-pink head with excellent persistence and fine lacing; highly effervescent.

Aroma. Moderate intensity; floral and cranberry-like tartness from hibiscus; earthy, slightly leathery notes from Mexican chilies; moderate fruity esters of red apple and pear; low peppery phenols; negligible malt aroma.

Taste. Initial tart hibiscus floral notes; mid-palate reveals a complex blend of earthy Mexican chilies; low grainy malt sweetness; moderate bitterness that blends with hibiscus tannins; extremely dry, crisp finish with a lingering peppery and floral aftertaste.
