This Wild Specialty Beer is a decadent, dessert-forward homage to Appalachian apple stack cake. A lush base of Apple Juice provides a bright, orchard-fresh foundation, while rich layers of Caramel and Brown Sugar evoke a molten, baked sweetness. The spice profile is remarkably complex, featuring a heavy dusting of three varieties of Cinnamon and a grounding touch of Nutmeg. The interplay between the tart, wild fermentation character and the indulgent, pastry-like ingredients creates a sensory experience reminiscent of a warm kitchen in autumn. It balances playful spice warmth with a clean, acidic backbone for a truly celebratory profile.
Appearance. Deep gold to amber-orange (10-14 SRM); hazy to opaque with significant sediment typical of fruited sours. Low, off-white head with poor retention; minimal lacing.
Aroma. High intensity. Dominant freshly baked apple and warm cinnamon spice; secondary notes of rich brown sugar and buttery caramel. A light, clean lactic tartness underlies the sweetness. Nutmeg adds a subtle, earthy complexity. Low funky esters are largely masked by the dessert aromatics.
Taste. Initial impression is a burst of sweet-tart apple juice and sharp cinnamon heat. Mid-palate reveals deep caramel and brown sugar richness, mimicking a dense cake. Bitterness is non-existent.
