This 2016 vintage transforms an Imperial Stout through freeze-distillation into a massive Eisbock. It presents a profound concentration of dark malts, yielding intense layers of dark chocolate, toasted pumpernickel, and molasses. The freeze-concentration elevates the 18% alcohol to a smooth, liqueur-like warmth rather than a sharp burn. Expect dense dried fruit notes of black cherry and raisin, emerging from the marriage of roasted Chocolate malt character and lager-like smoothness. The long aging process has integrated the heavy sugars and high alcohol, resulting in a velvet-like texture with a lingering finish of dark cocoa and warming spirits.
Appearance.Opaque ebony to dark brown in color with attractive ruby highlights (30+ SRM). Clarity is good, though the depth of color makes it appear nearly opaque. Head retention is poor, typical for high-gravity beers, leaving a thin, deep ivory collar and pronounced oily legs on the glass.
Aroma.High intensity, dominated by concentrated rich malt and a significant, spirituous alcohol presence. Prominent notes of toasted bread, dark chocolate, and molasses are complemented by malt-derived dark fruit esters such as plums and raisins. Clean fermentation profile with no hop aroma.
Taste.Initial impression is of immense, sweet malt richness balanced by a powerful alcohol warmth. Flavors of dark cocoa, caramel, and toasted grain lead to significant dark fruit notes. Hop bitterness is moderate, providing just enough structure to prevent a cloying finish. No hop flavor. The finish is defined by a rich malt character and a pleasant dryness from the alcohol.
Mouthfeel.Very full-bodied and viscous. Carbonation is low. Significant alcohol warmth is present but remains smooth and well-integrated, lacking any sharp or solventy edges. The texture is silky and palate-coating without any harsh astringency.
