Wedge is a vibrant Wild Specialty Beer born from a collaboration between Drop Project and UnBarred Brewery. This 5.5% sour delivers an assertive, sensory-driven experience defined by the bright, citrusy punch of lemon paired with the tart, vinous edge of gooseberry. Appearance. SRM 2-4. Pours a pale straw with a slight haze. Features a white, fizzy head that dissipates quickly due to high acidity, leaving minimal lacing.

Aroma. High intensity aromatics of freshly squeezed lemon juice and zesty peel. Secondary notes of green, slightly floral gooseberry and a faint, earthy wild yeast funk. Very low cracked-grain malt presence; hops are virtually absent.

Taste. Initial impression is sharply acidic and tart. Dominant flavors of tart gooseberry and acidic lemon pith. Fermentation character is clean but distinctly sour, with the sweetness of the fruit fully fermented out. Bitterness is negligible, with the balance heavily weighted toward organic acids. Finish is bone-dry, puckering, and exceptionally clean.

Mouthfeel. Light body with high, spritzy carbonation. Significant mouth-puckering astringency from the fruit and acid. Very low alcohol warmth; crisp and refreshing.
