This refreshing Saison presents a rustic interplay of traditional grains and vibrant botanicals. A foundation of Pilsner base malt and wheat provides a crisp, grainy backbone, while the addition of Saaz hops contributes a delicate, earthy spice. The infusion of fresh cracked black pepper bolsters the yeast’s natural phenolic character, which is further brightened by Citra hops and lemongrass, offering zesty citrus and subtle ginger tones. Though honey is utilized to provide a golden depth of color and a floral hint, the beer remains highly attenuated and dry. The result is a balanced, effervescent ale where spice and fruit harmoniously coexist.
Appearance. Pale gold to light amber (5–7 SRM) with a slight, hazy particulate presence from the wheat. Features a long-lasting, dense, rocky white head with significant Belgian lacing.
Aroma. Moderate to high intensity. Prominent notes of lemon-lime and citrus from the lemongrass and Citra hops, followed by a spicy cracked black pepper and floral Saaz character. Light grainy malt and a faint floral honey sweetness are present, backed by fruity esters of pear.
Taste. Initial soft, grainy maltiness gives way to a complex spice profile of black pepper and ginger-like lemongrass. Hop flavor is moderate, leaning toward citrus and floral earthiness. Bitterness is moderate (approx. 25 IBU), feeling firm due to the high attenuation. The finish is very dry with a lingering spicy, botanical aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Refreshing and crisp on the palate with no perceptible alcohol warmth and no astringency.

Honey, lemongrass, and black pepper Saison collab with Emeka Ogboh & Tate Eats
We’ve teamed up with artist Emeka Ogboh to create an exciting and unique fusion beer Untitled 1. Drawing on research conducted by Ogboh and his exploration of the senses and their connection to place, cane sugar and honey were added to the mix to represent Tate’s mercantile connections and the natural, urban environment and modern eco system that defines the Tate to this day. The result is a beautifully nuanced & subtle Saison, the flavour of fresh cracked black pepper is combined with the herbaceous floral and citrus notes of the Czech hop Saaz.
