This Wild Specialty Beer presents a vibrant sensory journey inspired by classic Belgian fruit ales. Infused with sour cherries, the profile opens with an inviting initial sweetness that quickly yields to the bright, tangy character of the stone fruit. A thoughtful blend of malt provides a supportive structure, while the wild fermentation introduces a nuanced funk that integrates seamlessly with the cherry esters. Despite its sessionable 3.8% ABV, it offers a surprisingly substantial presence on the palate, concluding with a crisp, refreshing finish. The result is a balanced tribute to nature, marrying tart fruit acidity with delicate, earthy complexity.

Appearance. SRM 8–15; deep rose to ruby red hue with a moderate, pink-tinted head. Displays slight haze from fruit solids with fair retention and light lacing.

Aroma. Moderate to high intensity dominated by fresh sour cherries and cherry skin. A subtle lactic tartness blends with earthy, hay-like wild yeast funk. Very low bready malt character serves as a soft, clean foundation.

Taste. Initial impression of light fruit sweetness transitions rapidly into a sharp, refreshing sour cherry tartness. Hop bitterness is very low, as the balance is driven by fruit acidity. Fermentation character is distinctly wild with mild funky esters and a clean, acidic profile. The finish is short and crisp with a lingering, bone-dry fruit-skin aftertaste.

Mouthfeel. Medium-light body with moderate to high carbonation that provides a lively prickle. Minimal alcohol warmth. A slight fruit-derived tannin provides a gentle structural astringency that enhances the refreshing, dry finish.
