Drop Project

Redwood presents a robust, amber-hued take on the American IPA, showcasing a complex barley grist of Cara Ruby, Cara Gold, and Cara Red. These specialty malts create a rich foundation of caramel and toasted sweetness that balances a fierce 80 IBU bitterness. A heavy boil addition of Chinook hops drives a sharp, resinous edge, while Cascade contributes layers of floral pine and soft grapefruit. The experience is capped with a Simcoe dry hop, intensifying the classic West Coast sensory profile with dank pine and zesty citrus. It is a bold, crystal-clear, and intensely bitter tribute to hop-forward tradition.

Appearance. Deep amber to reddish-copper (13-14 SRM). Brilliant clarity with a medium-sized, persistent off-white head that leaves significant lacing.

Aroma. High intensity hop aroma featuring prominent resinous pine, grapefruit, and citrus zest from Simcoe and Cascade. A medium-low malt presence of toasted caramel and sweet grain from the Cara malts supports the hops. Clean fermentation profile with very low esters.

Taste. Initial impression is of aggressive, sharp bitterness driven by Chinook hops. The flavor profile is dominated by resinous pine, grapefruit peel, and floral notes. A sturdy malt backbone provides flavors of caramel, toffee, and light toast. Finishes medium-dry with a long, lingering, and clean hop bitterness. The balance is decidedly hop-forward despite the complex malt bill.

Mouthfeel. Medium body with a smooth, slightly resinous texture. Carbonation is medium-high. A light, pleasant alcohol warmth is present but well-integrated, with no harshness or astringency.
